Pineapple Casserole

We had this casserole at church yesterday and I wanted to share it with you.  It was wonderful, and was told it is a great side dish for your Easter ham.
Pineapple Casserole


1 cup sugar
6 tablespoons flour
2 cups grated sharp Cheddar Cheese
2 20-oz. cans pineapple chunks, drained well (reserve 6 T juice)
1 1/2 cups Ritz cracker crumbs
8 T (1 stick) butter, melted

Combine sugar and flour. Gradually stir in cheese. Add pineapple and stir well. Pour mixture into a greased 9 x 13 casserole dish. (This can be done a day ahead and then proceed with the next step)

Combine cracker crumbs, butter, and pineapple juice and spread on top of pineapple mixture. Bake for 25 30 minutes at 350 or until golden brown. Serves 8 or more.
